I made Grandma Becky's buttermilk pancakes this weekend and here's the recipe in all its' splendor. I've been really trying to make them so that they turn out as good as when my mom makes them, kind of tangy and light. Good luck.

Grandma Becky's Buttermilk Pancakes
First, whisk together and let sit:
1 overflowing cup buttermilk
1/2 tsp. soda

Next, whisk together then mix into buttermilk/soda mixture:
1 egg
2 T. oil

Next, whisk together:
1 cup flour (little less than a cup)
1 T. sugar
1 tsp. baking powder
1/2 tsp. salt
and combine with wet ingredients by incorporating in small increments until batter is smooth. Ideally, the less stirring, the better. That one small thing has made all the difference in these turning out like I like them.

Heat skillet to 300 and pour small circles of batter onto skillet, turning pancakes when small bubbles form. Serve with your choice of toppings. These are really good buttered and dusted with powdered sugar. Enjoy!
